Ginger Chicken

Purely my invention :) The key is to cut the ginger as fine as possible - I used to do slices before deciding on juliennes. And you need to believe that no amount of ginger is too much!!
stuff needed
1. meat 2. ginger 3. green chilies 4. salt (to taste) 5. soy sauce 6. vinegar 7. scallions (for garnish)
how to make
1. hack ginger and chillies. the finer you hack the ginger, the better, but i like discrete bits. chilles should be split lengthwise rather than transverse.

2. fry ginger and chillies.

3. add the meat and salt. keep on high heat and do the next step before the meat whitens competely.

4. add soy sauce and vineger. adjust color to light yellow (??).

5. cook covered on medium till dry and darker. can optionally add cornflour + stock to make a slurpy curry. garnish with fresh chopped scallions.
